Prep the "Mushrooms" Peel the eggplants. Cut them into 2cm cubes.
Add a teaspoon of Adjika or fresh chili for a Caucasian-style twist.
Add sliced mushrooms. Cook until liquid evaporates and they turn golden. 3. The Golden Fry Add eggplant cubes to the pan. Fry on medium-high heat without stirring too often.
Toss raw eggplant cubes in beaten eggs before frying. This creates a protein coating that tastes remarkably like wild mushrooms.
